In honor of the total solar eclipse on Aug. 21, three restaurants have shared with us drink specials they’re offering to celebrate this celestial event. Considering the next solar eclipse won’t be visible in the United States until 2024, we’re in favor of borrowing one or more of these recipes and toasting what NASA calls one of “nature’s most awe-inspiring sights.”
Mason Jar White Sangria: Cabo Flats, a cantina and tequila bar group in Florida, makes a play off of the round shadow of white seen during the solar eclipse with a “half moon” of orange. This sangria is filled to the brim with eclipse spirit.
Mason Jar White Sangria
3 each fresh blackberries
3 each fresh blueberries
3 each fresh strawberries
1 each “half moon” orange slice
2 oz. Riuniti Moscato
1 oz. Veev Acai Spirit
1 oz. peach puree
1 oz. Cointreau
Combine all ingredients in the mason jar and store in the cooler/fridge overnight. Make each to order by filling to the rim with ice. Shake to mix.
For cool kids
Beg, Borrow, Steal: Publik Draft House, an upscale gastro pub in Atlanta, takes a more obscure approach with their name “Beg, Borrow, Steal,” a line from Dark Side Of The Moon by Pink Floyd. The drink special is accompanied by a specialty slider for $2.34 to symbolize the time when the shadow of the moon will first touch Georgia.

1 oz. Goslings
1/2 oz. blood orange and ginger shrub
1/4 oz. pure cane syrup
3 dashes black currant
3 dashes cocoa bitters
Splash of Guinness
Combine, shake, and double-strain into a small coupe. Top off with Guinness.
Reanimator: Cindy’s, a rooftop restaurant at the Chicago Athletic Association Hotel, is serving up a fun and dark special. The hotel’s bartender and “Spirit Guide,” Nandini Khaund developed the Reanimator—a inky black cocktail both refreshing and opaque—to complement the night sky during the eclipse.
1.5 oz. Avua Prata Cachaça
1 oz. lime juice
1/2 oz. Demerara syrup
1/8 oz. organic activated charcoal
1 oz. ginger beer
Fresh pansy for garnish
Blend the blueberries, Demerara and charcoal ahead of time. Muddle 6 blueberries in shaker tin, then combine all ingredients, except ginger beer. Add ice, shake vigorously.
Strain over ice into a rocks glass, top with ginger beer. Garnish with pansy.
